Leavening

  1. “The yeast is leavening the dough in a warm corner of the kitchen.”
  2. “Baking powder provides quick leavening for muffins and pancakes.”
  3. “A few jokes were leavening an otherwise tense meeting.”

“Leaven” 源自拉丁语 levamen(减轻、抬起),经法语 levain(发酵剂)进入英语;与 lever(杠杆、抬起)同根,发酵即让面团“鼓起来”。

在面包、蛋糕烘焙中,“leavening” 决定成品松软度;宗教与文化语境里,leaven 也象征潜移默化的影响(a little leaven leaveneth the whole lump)。

“She checked the bowl every hour, watching the sourdough leavening until it doubled in size.”
